Pep up your peppers, mushrooms and courgettes with this easy and tasty vegetable stuffing mix. Paxo Tomato & Herb Veggie Fillers help take simple veg to to the next level. They're made from a mouth-watering blend of breadcrumbs, cous cous and herbs & seasonings. They're quick and easy to use – just add 300ml of water, mix well and let the mixture stand for 5 minutes before stuffing your peppers or other veggies and then baking. For a little extra decadence, add grated cheese to your stuffed vegetables for the last 5 minutes of cooking time.

Topping with your favourite cheese in the last 5 mins of baking? Filling courgettes or portobello mushrooms?

Oven cook: From Ambient

1 Pre-heat oven to 220°C, fan oven to 200°C, Gas mark 7.
2 Empty the sachet into a bowl, adding 300ml of boiling water, mixing well.
3 Leave to stand for 5 minutes.
4 Meanwhile, halve and deseed 3 bell peppers and place on a lightly greased baking sheet (cut a sliver from the base if necessary, to help them sit flat).
5 Stuff approximately 65g of your Veggie Filler into each bell pepper half.
6 Bake for 25-30 minutes until piping hot.
